For Tofu Snacks application, we recommend our HAF Type Gellan Gum. The main fucntion of Tofu Snacks needs from Gellan Gum is to improve the elastic characteristics to have a better mouth feel. HAF Gellan Gum is of high viscosity and gel. strength in water after dissolving and the solution is not as clear as that from Low Acyl Gellan Gum. Answer: High Acyl Gellan Gum HAF could be applied in Tofu Snacks to get elastic mouth feel.
Question: How much dosage rate for Gellan Gum HAF applied in Tofu Snacks?
Answer: The recommended dosage for High Acyl Gellan Gum is 0.15%-0.2%.
Question: Is Gellan Gum HAF sensative to Kations ? Does it need to dissolve gellan gum HAF first then add salts, just like application of LA Gellan Gum?
Answer: No need to dissove HAF Gellan Gum seperately; all materials could be premixed and then dissolved by heating.
Question: Is Gellan Gum HAF Solution Clear?
Answer: No! Gellan Gum HAF Solution is non-transparent. It's milky or cloudy.
Question: Is Gellan Gum HAF of Gel. Strength? How about the gel. texture?
Answer: Gellan Gum HAM Gel. Strength is approx 1000g/cm2; the gelling texture is of elasticity characteristics.
Question: What is the setting temperature of Gellan Gum HAF?
